Question for churchgoers? What does Oil symbolize?

I have been to many evangelical churches, in this kind of denomination they dont baptize unitl the child is 10yrs and older. What i have seen done is the child is presented to the congregation a prayer is said and then Oil is put on their forehead. What does oil symbolize? What kind of oil do they use? Is it cooking oil, olive oil, anyone know?
